Ingredients
- 1 cup water
- ⅓ cup instant coffee
- 1 ⅛ cups 100-proof vodka
- ½ cup xylitol
- ⅓ cup erythritol
- 2 pinches pure powdered stevia
- 3 tbsp vanilla extract
Instructions
- Bring all ingredients except vodka and vanilla to a boil over medium–high heat. Once boiling, remove from the heat and allow to cool to room temperature.
- Add the vodka and vanilla extract. Place in a tightly sealed decanter and refrigerate until ready to use. Makes 2½ cups. Each serving is 1 ounce.

Why 3 different sweeteners? Will trivia work for all 3?
Hi Janet. Thank you so much for your question. Here is a link to a recent PDF discussing sweeteners that may be helpful. But to answer your question… no. Stevia in the Raw has dextrose in it which does act as a filler (it is sugar) to provide the quality you would need for baking. But I have found that it is much too sweet and doesn’t work for all recipes. I have tested hundreds of recipes and through that found that the combination of sweeteners (xylitol, stevia and erythritol) works the best for most recipes – it is the best tasting and most reliable in baking. There are times when I use one over the other (for example in ice cream – I only use xylitol and stevia – the erythritol recrystalizes when frozen… no good). I hope this helps.
